I chose almonds this time mainly to be different as I made brownies with coconut flour.

Almond flour (also known as almond flour; it's not actually a flour) is much easier to find these days than it was a few years ago.

You can also make your own almond flour at home by placing raw almonds in a food processor and pulsing them until they reach the consistency of flour. Make sure you don't mash them too much or they'll turn into almond butter which is delicious ... but not what you want when you bake these cookies!

Ingredients

1.5 cups almond flour

3/4 cup powdered erythritol (we use monk fruit sweetener)

1 teaspoon of vanilla extract

1 large egg

1/2 teaspoon of baking powder

1/2 cup melted butter

1/2 teaspoon xanthan gum

3/4 cup unsweetened chocolate chips

Instructions

First melt the butter before mixing it with the erythritol, egg, and vanilla extract.

Add the rest of the dry ingredients and mix until combined.

Mix the dough with your hands and knead the dark chocolate chips.

Using your hands or a small ladle, divide into approximately 12 small balls.

Make sure the oven is preheated to 350F before setting it up and bake for 12-15 minutes.

Let cool 10-15 minutes before serving.

Keto Sugar-Free Chocolate Chip Cookies

Whenever we went to see my grandparents, there were two sections of treats in the closet.

One was the normal junk food section full of fat and sugar, especially for us kids. The other was sugar-free JELL-O, granola bars, and low-carb cookies for my diabetic grandfather.

One afternoon I was curious and escaped with one of the “not for kids” sugar-free peanut butter cookies.

Ingredients

1.5 cups almond flour

1/2 cup salted butter, melted

3/4 cup monk fruit sweetener

1 teaspoon of vanilla extract

1 egg

1/2 teaspoon of baking powder

1/2 teaspoon xanthan gum

3/4 cup unsweetened chocolate chips

Instructions

Preheat the oven to 350 F.

Prepare a baking sheet covered with parchment paper.

In a large bowl, add the melted butter, monk sweetness, additional vanilla, and an egg. Beat well with an electric mixer for about 20 seconds.

Then add the almond flour, baking powder, xanthan gum, and a pinch of salt. Mix until everything is well incorporated and the texture is pasty. Add the unsweetened chocolate chips and mix well with a spatula.

Use your hand to shape the cookie dough into 2-3 inch balls. You should be able to make about 9 to 12 balls of all the cookie dough. Place on a baking sheet a few inches apart.

Bake for 12-15 minutes. Then set aside and let cool as well. Serve and enjoy!
