This no-bake cheesecake is my go-to when I want something simple and delicious to make ahead. It is smooth, creamy, light, and tasty with a delicious wholemeal cracker that disintegrates in a food processor within a few seconds.

The best part? You guessed it, no inspection of the oven, absolutely no baking and prepared in a few minutes. The texture is super light and fresh almost like a mousse, so you don't have to worry about the dense filling and buttery, sweet and tasty crust. It needs to sit overnight in the refrigerator, so it needs to be prepared in advance. Waiting is definitely the hardest part!

What do you need to make this recipe no-bake cheesecake?


Brown Sugar - I love adding brown sugar to my base, not only for extra sweetness but also for a bit of moisture, it helps pack it all up.

Butter - Melted butter is used to combine the ingredients for the cheesecake crust. This helps set the base and makes for a delicious buttery taste.

Cream Cheese - This is the main ingredient in all cheesecake recipes and gives it a creamy and flavorful taste. Make sure it's room temperature to avoid lumps.

Condensed milk - sweetened condensed milk adds whipped cream to the cheesecake, prepares it, and also helps sweeten it.

Sour Cream - adds that classic fresh taste that we all love.

Whipped cream - it is very important to whip the cream to a semi-rigid level, this will hold the contents together and make them thick and creamy.

Lemon Juice - Fresh lemon juice really brightens things up and improves the taste, but doesn't add a distinctive lemon flavor to the cheesecake. If you want more lemon flavor, you can add more flavor.

Vanilla - Be sure to use real vanilla extract, not essence, for best results.

Ingredients of no-bake cheesecake

  1. It's 250 ml of double cream.
  2. Prepare 300 grams of cream cheese.
  3. It's 150 grams of icing sugar.
  4. It's 400 grams of digestive biscuits.
  5. It's 100 grams of butter.
  6. It's of optional flavorings.
  7. It's 200 grams of chocolate.
  8. It's 50 ml of baileys.

No-bake cheesecake step by step

  1. crush biscuits to fine crumbs. melt butter and mix with crumbs to form a firm mass, may need a bit more or less butter depending on how crunchy you want your base. spread into a 9x13 or circular dish and refrigerate whilst continuing.
  2. soften the cheese and mix in icing sugar and optional topping it adding one at this point. if you are adding anything and it made this part runnier you may need to add a few teaspoons more icing sugar until it's at a smooth thick consistancy.
  3. whip cream till it forms soft peaks and then add in your cheese and fold until it's mixed. don't overwork it.
  4. spread your cheese mix over the base and refrigerate for a minimum of two hours.
  5. tuck in and enjoy.
